Vegetable Fried Rice

Fried rice or Vegetable fried rice is one of the favorites of my daughter. Since it is easy to cook, i consider this dish at least once in a week. Fried rice tastes good if it is cooked in home made ghee but it will be very heavy for the stomach. Still it is a  very nutritious main course dish for the youngsters since it contains lot of vegetables like carrots, beans, capsicum, cauliflower, nuts like cashew, dry fruits like raisins, etc. Moreover use only long grain basmati rice.

Ingredients:

  • Basmati rice – 1 cup
  • Carrots – 1 small, diced into small pieces
  • Beans – 5 no’s, cut into small pieces
  • Capsicum – 1 no, cut into small pieces
  • Cauliflower – 3-4 florets, cubed
  • Onion – 1 medium, finely sliced
  • Cashew nuts – 10 no’s
  • Raisins – 20 no’s
  • Coriander leaves – 1 tbsp, finely chopped
  • Ghee – 2 tbsp
  • Whole spices:
  • Cinnamon stick – 1” piece
  • Clove – 5 no’s
  • Cardamom – 3 no’s

Method of Preparation:

  • Wash and drain rice, keep aside for 15 mins
  • Heat ghee in a heavy bottomed broad pan, fry cashew nuts and raisins, drain and keep aside
  • Fry whole spices, add finely chopped onion and cut vegetables and sauté for 5 mins with a pinch of salt
  • Add  rice and fry for 3-4 mins, add 2 cups of boiled water, cover and cook over simmering
  • When the rice is done well, remove from stove and cover and keep aside
  • Garnish with fried cashews and raisins and finely chopped coriander leaves

N.B.: It tastes better if it is served warm
