In Male’, the capital of Maldives, there is a shop called Fantacy where you get frozen uncooked parathas of different type, like the Onion Paratha, Methi Paratha, Plain Paratha, Aalu Paratha. One pack consists of 5 parathas and it costs MRF 24. Today my breakfast was this simple to cook paratha, Just open the pack and cook it as you make chapathi and eat it hot. You will not need curry also.

I live alone here in Maldives and I cook my food. I do not spend much time in cooking as I do not have enough time to spend. I have my own way of managing my food and make sure that I eat all my meals.

I need only one curry and usually for breakfast, I have bread or I had got some Avloose from my mother, which is a dish from Kerala. Avloose is actually rice powder, fried well and can be kept for many days. I get some banana and mix it with Avloose and its really good for breakfast. Or I go for bread, brown bread preferably and steam it so that it become very soft and I like the taste. Other things if I am really very busy, I go for corn flakes or oats with milk and some fruit juice.

Before I leave for my office, I cook the rice using a rice cooker, just takes about 10 minutes and I will have at least one curry ready in the fridge. I cook some curry in bit large quantity so that I can use it for 2-3 lunch. As soon as I finish cooking and the curry is to room temperature, before using it, I transfer it into different plastic boxes, which can be used in in microwave oven to heat. Before starting my lunch, I just take one box of these curry and warm it up in a Microwave Oven and have my lunch. I always have some fresh vegetables in the fridge for salad and curd is something which I cannot miss even for a single lunch. Other easy way is to steam some vegetables when I cook the rice in the rice cooker and just add some pepper power and salt, its again good for a side dish with the lunch.

Whenever I go to India, I get some home made pickles and some chatni powders, which can be used along with lunch.

Here is a small recipe which I try often, no name but its easy and works well

Cut some onion, potato, chillies, garlic, ginger

First cook the onion, ginger, chilly, add some salt, turmeric powder and later corriander powder and chilly powder

Add potatoes and tomato

Once the potato is cooked, add some coconut milk and boil well. That’s it , you are done. Its good with rice and even bread. if you make chappaties, it will work with that too.
