Aviyal or Avial is like a multi vitamin tablet since it has all sorts of vegetables. In Kerala, it is an important side dish for any wedding among Hindus or an important item for Onam feast.

Ingredients:

  • Raw banana – 1, cut into 2” piece
  • Yam – 1 cup, cut into thin slices of 2” piece
  • Drumstick – 2 no’s, cut into 2” pieces, slit
  • Cluster beans – 1/4 cup, slit
  • Snake gourd – 1 cup, 2” piece
  • Carrot – 1 cup, 2” piece
  • Cucumber – 1 cup, 2” piece
  • Brinjal (optional)
  • Raw mango – 1/8 cup or curd – 5 tbsp
  • Turmeric powder – 1/2 tsp
  • Coconut grated – 1 cup
  • Green chilly – 5 no’s
  • Cumin seeds – 1/2 tsp
  • Curry leaves – 1 tbsp
  • Coconut oil – 1 tbsp
  • Salt to taste

Method of Preparation:

  • Grind coconut, green chilly and cumin seeds into a coarsely paste with little water
  • Wash and cover and cook vegetables with 1/2 cup water, turmeric powder and salt to taste
  • When the vegetables are done well, add coconut paste and curd (if you have added raw mango along with the vegetables don’t add curd) mix well, cover and cook over simmer until the water is absorbed
  • Add Curry leaves and coconut oil, cover and remove from stove
  • Don’t open until the time for serving

It is an ideal side dish for rice and roti
